Smoky Tandoori Chicken on Frying Pan

This dish originates from the Punjab region of the Indian subcontinent where the chicken pieces are baked in a controlled environment using many traditional spices from the region. Once the meat has been processed with the marinating, it only requires baking- making it one of the simplest of all. That is why this has gained worldwide popularity and recognition.

Ingredients

  • 1 kg chicken
  • 1 tsp chili powder
  • 1 tsp Kashmiri chili powder 
  • 1 tsp cumin powder 
  • 1 tsp coriander powder 
  • 1 tsp ginger paste 
  • 1 tsp garlic paste 
  • ½ tsp turmeric powder 
  • ¼ tsp black pepper powder
  • 1 tsp garam masala powder 
  • ½ cup yogurt (sour)
  • 1 tsp sweet yogurt 
  • ½ tsp salt 
  • 1 pinch orange color 
  • 1 tsp cooking oil or butter

Let’s make the smoky tandoori chicken

Step 1: Processing the meat

  • Take one medium-sized whole chicken and cut it into 4 pieces; two breasts and two leg quarters. Give them small cuts so that they will be well marinated and well cooked. This process is common to all large pieces of meat.

Step 2: Marinating

  • Take all 4 pieces of meat into a large size (easier to mix in it) bowl. Add chili powder, Kashmiri chili powder for bright red color, cumin powder, coriander powder, ginger paste, garlic paste, turmeric powder, black pepper, garam masala powder, yogurt, sweet yogurt, salt, or whatever is needed to taste, and orange color. 
  • Mix all the added ingredients with the chicken pieces very well using your hand. Let it rest for 15 minutes, then add two teaspoons of cooking oil and mix again. Let it rest again for at least one hour and cover with plastic wraps. The more you wait the better it gets.

Step 3: Cooking

  • Take a frying pan and add one small chunk of butter or some cooking oil to the hot pan. Make sure the heat is a little bit less than medium and the butter is well spread on the pan. Add the chicken pieces into it. 
  • Right after two minutes, cover the frying pan with a lid. After five minutes, flip the chicken pieces and cover them again. It should take around 15-18 minutes in total to cook. Brush some butter or oil onto the chicken pieces (both sides). 

Now how to get the smoky flavor

  • Take the chicken pieces on a small grill and remove the frying pan from the cooking stove. Hold the grill directly on the stove (do not let it touch the stove). Make sure the heat is on ‘high’. It should take one minute for both sides of the chicken pieces to get the Smokey flavor and the right color. 
  • If you want them to be smokier, take one small piece of charcoal and place it directly on the stove. When it has a whitish color, put it into a small bowl, add some oil and place the bowl into the cooked chicken bowl, and cover with a lid. Remove the charcoal after 4 minutes.
